A clear household system for preventing contamination, storing food correctly and sharing cooking space without conflict or avoidable illness.
Create shared rules for fridge pantry and equipment
A safe kitchen needs clear ownership and routines rather than assumptions about how every household cooks.
Agree on shelves, freezer space, dry storage, cleaning products, rubbish, shared utensils and how costs are divided. Label personal food with a name and date, use sealed containers and keep raw meat, poultry and seafood below ready-to-eat food so leaks cannot contaminate it. Do not store food beside household chemicals. Check that the refrigerator remains cold and is not so full that air cannot circulate.
Discuss dietary, religious and allergy needs respectfully. Separate utensils and chopping boards when cross-contact creates a health risk, not merely a preference. Do not borrow food, medicine or specialist ingredients without permission. Create a simple cleaning roster and report pests, broken refrigeration or unsafe plumbing to the accommodation provider promptly using the proper maintenance process.

Wash hands and separate raw from ready-to-eat food
Most safe-cooking routines begin before heat reaches the pan.
Food Standards Australia New Zealand advises washing hands with warm soapy water and drying them before food handling and after contact with raw food or the toilet. Clean benches, boards, knives and dishes with hot soapy water. Cleaning removes dirt; sanitising is a separate step where needed. Do not handle food for housemates when you are ill, and keep pets and waste away from preparation areas.
Use separate boards and utensils for raw meat and foods that will be eaten without further cooking. Wash fresh fruit and vegetables under running water, but do not use soap or detergent. Official guidance says not to wash raw chicken because splashing can spread microorganisms around the kitchen. Never place cooked food back on an unwashed plate that held raw meat.

Cook chill and reheat using safe limits
Smell and appearance cannot reliably show whether harmful microorganisms are present.
FSANZ recommends cooking poultry and minced or rolled meat to at least 75°C in the centre; a clean food thermometer provides better evidence than colour alone. For other foods, follow packaging and official instructions. Keep cold perishable food at 5°C or colder and hot food above 60°C. Thaw frozen food in the refrigerator or microwave rather than leaving it on the bench.
Cool cooked food quickly in shallow containers and refrigerate it promptly. The official two-hour and four-hour rule says perishable food left in the 5–60°C danger zone for less than two hours can be refrigerated again; between two and four hours it should be eaten immediately; after four hours it should be discarded. Time is cumulative, including shopping, travel, preparation and serving.

Check dates recalls and signs that need medical help
A safe household discards uncertain food and uses official alerts rather than social-media rumours.
Read storage and cooking instructions when shopping and check package integrity. Food past a use-by date should not be eaten; a best-before date concerns quality, although the food must still be fit and stored correctly. Subscribe to or check FSANZ food recalls, and match the product name, size, date and batch code before following the recall action. Photograph relevant packaging and receipt if a complaint or medical assessment may need details.
Foodborne illness can cause vomiting, diarrhoea, abdominal pain and fever, but severity and causes vary. Use healthdirect or a clinician for advice, especially for severe symptoms, dehydration, blood, pregnancy, a vulnerable person or symptoms that persist. Call 000 for a life-threatening emergency. Tell the accommodation provider when a shared facility failure such as warm refrigeration may have affected multiple residents.
